Here is another great one from Jamie’s America book, often forgotten, in the light of 15 min. meals and other books. I have cooked some cool things from the America book. I intend to cook some more. It’s a great read, with lots of colour and stories.
This being a Navaho Indian part of the book, our Dartmoor Hogget and Lamb was ideal. Hopefully I use mutton at some point for this recipe, that would be the business. I pity the fool that uses factory farmed lamb.
I used neck fillet instead of recipe shoulder this was a quicker cooking cut: nearer 1.5hrs total instead of 2.5hrs plus. That said this dish is pretty forgiving so an extra 15 or 30 mins would not do too much damage. It’s just a case of checking what your meat is doing. I would avoid using salt at the beginning if you’re using stock cubes. I used homemade duck stock, so had more control over the seasoning.
Overall this is another winner 09/10 Thank you Jamie and crew.
We finished the meal with mothers amazing Strawberry tart and Elderflower cream.
Elderflower cordial is a must make. You dont have long, before the flowers are gone. The syrup can be used in many ways. The cream was very light and still holding shape, possibly the lemon in the elderflower syrup was helping with this.
Looking forward to visiting Fifteen again in November when we are both in London. The new menu is getting amazing reviews. Our previous visits have been very good.

Onion, potato, egg, smoked paprika, cumin, Tabasco.
A clove of garlic sliced, or a garlic clove bashed (intact, skin on) is optional.
Toasting cumin, then grinding it, is the way to getting maximum flavour here. The smokiness of paprika and cumin is a great combination. Go very easy on the Tabasco; a little kick is all that’s required. Tabasco’s sharpness should not rule the dish.
Sliced shallot or onion (I had half an onion). Use a knife, a mandolin will be too fine a cut. The onions will cook before they caramelise. They will more likely burn.
I broke up the potatoes a bit when frying them; rough edges means caramelised sticky yuminess. I sound like Jamie.
Adding Stock, not all at once I added four hits of stock allowing the dish to absorb this each time. You don’t want baby food at the end, so easy with the stirring.
Near the end, I put a lid on the pan to cook the top of the eggs.
I finished the dish off with Chive flowers, after reading Legend Niamh Shields had done the same. Mothers Garden has chives. Coriander or parsley would be a nice finish or a small bowl of minted yogurt on the side perhaps? But don’t go shopping for it. Remember, this is a leftover recipe.
I used homemade duck stock; I had six pints of it. I would have normally used a chicken stock cube, probably OXO. Seasoning with less salt if using a stock cube. Black Pepper is very welcome in this recipe.

Very nice, I wish our grill would get hotter, I think that would of made it even better. A bit more colour on the fish perhaps. That said everything was cooked nicely. The squid was quickly fried in butter /olive oil with salt, pepper and lemon juice.
‘Ivybridge Fish shop’ yet again providing stunning produce. The key to good squid is to buy fresh squid. Freezing toughens squid up. We have the most amazing squid on the south coast. Don’t buy frozen imported squid.
Garlic bread made with garlic butter and marjoram filling worked very well. Marjoram is so underrated.
Normandy came to Ivybridge today, more like Norman came to Ivybridge. It is unlikely a market in Normandy would be as crap as this one. The cheese was OK.
I have better UK cheese from ‘Totness good Food’ ‘Ivybridge Market’ or ‘Royal Williams Yard’. The best French cheese I have had outside of France is in Munich (‘Galeria Kaufhov’) and London (‘La Fromagerie’). Neals Yard is still the best cheese shop in the world. Waitrose has a good cheese counter, certainly better than the rival supermarkets.

Summer is defiantly here, but the rain has also arrived again. The first mackerel has been cooked. At the weekend I made a Strawberry Crème Bavoire, we put gooseberry with fresh elderflower on the side, a superb combo. On my last visit to Exeter I stopped at a restaurant called cote http://www.cote-restaurants.co.uk this is a chain. It was not a bad meal at all. Breton Chicken, Celeriac ham remoulade and a very nice crème caramel for £12.
Previously I visited Totness good food. It is not as good as it used to be. Perhaps my expectations have gone up. I did get some nice vegetables. The fruit and veg stall is worth visiting. Some superb meat, superb cheese.
Worth avoiding: the place that sold me a tart tatin . This needs to be served from an oven perhaps. Bacon, I had previously was not as good this time, it could have been a one-off. The other bacon stall is awful; I think it’s called Blackwell. I noticed Teighn valley bakery was also there, this is also crap! We bought one of their loaves from Williams Yard food market, my girlfriend is Bavarian, Bavarians are experts on bread. I am no expert but Teign bakery bread is shit!
Also leave the Pretzel alone, until you are in Germany: Tesco’s and Totness are selling them, both are shockingly poor.

Work has brought me in to a real kitchen. It is really cool to be with people who know so much about food and cooking. Very nice people, also very hard workers, Results mean focus and hard work. Superb food, no time for photos though. A professional environment, my blog would not do it justice. I love being in this environment.
Our local council has said no to Crayfish traps. They say environment agency has a blanket ban on them over the whole of Devon. I would love to hear others comment on this.
My Cakes are improving, creaming sugar and butter, was my previous problem. 10 mins. You cannot overwork this stage, so don’t be afraid to give it plenty. The butter must turn white, I am using a hand mixer, lucky you if you have a table top mixer. Putting Soda bread in the oven at the same time as your cake is a great idea. Soda Bread Baking Temperature can be varied with good results. Adding chopped herbs to Soda Bread is a great idea, there are plenty around. Try finding them in the wild, before you spend money in a supermarket. Most U.K. streets have Rosemary at least. Rosemary finely chopped makes Soda Bread supreme!

Ghost Poet and Woodpecker Wooliams are my musical choices at the moment. Unique, quality, check them out. A a superb Lucy Rose Gig in Exeter, has reassured me music is still cool. LemonGrove Exeter has superb sound engineers. Lucy’s new Bass addition has added to the sound in a really good way. Exeter University is a outstaingly good place. Also New Model Army are bringing out a new Album , different to their last ones. They look amazing on youtube. November I see them again in London, previous gigs have been superb.
