Pitt Cue Mutton Fillet


Fillet of Mutton, now that sounds amazing. As with fillet of beef, less flavour more tenderness.
Boy was it tender, Farmer Phil Bond, maximum respect!
I used a meat rub recipe from the Pit Cue book. Our Library has the Pit Cue book, libraries rock! Fuck Cameron and his cronies shutting down libraries. This is not being done for your benefit, trust!
I added one of my chilis from the garden, used Demerara as we had run out of soft sugar, wet mustard instead of powder. It was pretty much the same gig though. I was very impressed with the result. The full recipe is in the book.
I used finger touch to get medium rare/rare. The result was Bang on! The more you do this the more accurate you will get.
Broad beans tomato celery spring onion cous cous on the side, seasoned with salt and pepper and a dash of Lemon.
