Arancini

My first try at Arancini, or ‘little oranges’ as it translates in Italian, worked out well, I loosely followed Gennaro Contaldo’s video tutorial on Jamie Oliver’s web site, another winner.
As I was using leftover Prawn risotto, which was made with well flavoured prawn stock, no cheese was used. I had no parsley; I threw some basil in there.
Results were very good; I will always make more risotto than is needed so these tasty treats can be made.

More Pasta

So we are back again, 50% 00 grade flour from Waitrose, Clarence Court Rare breed eggs, 50% Semolina (De Cecco) flour, not as tough as the last pasta. Jamie Oliver recipe from Jamie’s Kitchen , superb results again. Waitrose tomatoes, waitrose olive oil, a rub of garlic, butter,toasted pine nuts seasoning and finished with parmesan.
I now find making pasta very easy. Follow Jamie’s tutorial video on his web site.

Chocolate

Sometimes only the best will do. We are still big fans of http://www.amedei.it If ever you’re in Munich a must visit is ‘Gotterspeise Chocolaterie and Cafe’. It’s an amazing place, cakes/desserts to die for, seriously top notch chocolate products and more. Willie’s Cacao is still one of the best food items in a store cupboard.
Were listening to PIL, Little Dragon , The Notwist, Ozric Tentacles and MIA amongst others how good is that, very! Little Dragons new Album is out, you bet it’s good. Check out their cart competition. Hopefully payday sees a couple of tickets to their Brixton show.

Pasta

Another attempt with the pasta machine, visually great results.
Realising how the tagliatelle attachment works, was simple but effective. Holding one end of the pasta until the very end, that’s the end that has not gone through. The other end goes straight down not on to a table or your hand or both. It is scooped by hand at the last second/nano second.
I hanged the pasta on a clothes drier until the water had boiled, this worked well. I used Semolina flour, next time I mix 00 with semolina flour 50/50. I used Tesco happy eggs, this showed. Next time it’s Clarence Court rare breed. Also next time, more Yolk for richer pasta. I used 2 eggs 200g flour.
Mixed with a duck ragout, very nice .Pan fried duck leg, onion garlic fennel seeds some in season asparagus , Fennel tops added and taken out (flavour).

Dukkah Flatbreads

Easy to make, cheap, taking a good but plain meal to another level. Honey and lemon chicken with these superb.

tar. plain natural yogurt Dukkah Spice mix. I used Ottolenghi brand, because Yottam Ottolenghi is a food hero and his produce is very good. It is available from his on line shop. Or if you’re lucky enough to be in London visit one of his Deli/ cafes / restaurants.
You should be able to find Dukkah in an import shop. Waitrose also sell it. It would not be that hard to make your own. Google it!
Mix all the dry ingredients in a bowl, I use a balloon whisk. Fold in the yogurt and a dash of olive oil. If it’s too dry add more yogurt, if it becomes too wet add more flour. Knead until well mixed, you don’t need to go mad, like you would for normal bread. No proving is required. Leaving the mix for half an hour may have an effect, I don’t know. Roll in to golf ball sized or slightly bigger. Roll out the flat breads, I use a rolling pin. A bottle could be used. Most of the world shapes flatbreads with only their hands. Place on a baking parchment sheet on a tray at 200 degrees or somewhere near. Take them out when they have gone brown (about ten minutes).

More from Gordon’s Ultimate Home cooking book. Eton Mess Bombe is a winner, cream meringue strawberry and white chocolate. I once saw Eastern Mess on a menu (Gizzi I think, I may be wrong). Anyway I hope to mess around with this idea. As you can see I used Dariole moulds to make individual ones as opposed to a big family size one. Another stunning result. Thanks Gordon.

Gordons Great British Pub food book is also worth investing in. I made the crab cakes a week ago. Best crab cakes I have ever had. Beautifull mix of flavour, very well balanced. Big shout to my crab supplier ivybridgefishcompany.co.uk for a very nice crab. Make sure you have a pot big enough. I once messed up a crab by cooking its claws separate Kev or Trisha will give sound advice on cooking any of there produce. They now have premium fruit and vegtables in there shop, they are very good.
