Gordon’s Just Desserts book is the best book ever. Classic standards with Gordon’s precision and beauty.

The last time I saw Malibu was at a party in the 80s being swigged by someone called Mental Maurice, Duran Duran and mullets were in vogue.

How astonishing to find it has a place in the world of good food. Vanila,cinnamon,star anise, Malibu, a light caramel. Sublime results .

I prefer meringue in my bavarois, it makes it a little lighter in texture. I used a little too much gelatine. The banana liquor, next time I use the real deal from De Kuyper or Bols. Not some miniature from Soho. But a very nice Christmas dessert, never the less. Thank you again Gordon Ramsay.
