Ox Cheeks browned, removed . Then a paste of shalot,garlic,ginger,turmeric,lemongrass, is fried of until the rawness is lost. Then spices tempered and ground are added,cumin,coriander and fennel. Also added chopped fresh turmeric,fish sauce. vegetables also added along the way, carrot,sweet potato, baby sweet corn, peas,green beans. Added to taste at the end tamarind and honey. Coriander leaf also added at the end.Season to taste. Slow cooked in water, for 6hrs.
Served with Jasmine rice and Pak Choi
